How to hold brisket

Wrap the finished brisket and set it in a dry, towel lined cooler. It will stay hot for 4 hours or more and usually gets better.

The method

  1. Pull the brisket when it is probe tender, usually 195 to 205°F.
  2. Vent it on the counter for 10 to 15 minutes so the bark does not steam.
  3. Wrap snugly in butcher paper or foil.
  4. Set it in a pre-warmed, towel lined dry cooler and cover with more towels.
  5. Hold 2 to 4 hours or more. Check that it stays above 140°F.
  6. Slice against the grain right before serving.

Can I hold brisket overnight?+

Yes, in an oven set to about 150 to 170°F, wrapped. Many restaurants hold briskets for hours this way. Keep it above 140°F.

Should I hold brisket in foil or paper?+

Either works. Paper keeps a firmer bark. Foil holds heat and moisture a little better.
