Rest brisket at least 2 hours, pork butt 1 hour, and ribs about 15 minutes. Finishing early is good: wrap and hold in a dry cooler.

Why the planner plans to finish early

A long hold is a feature, not a failure. Texas A&M research found a 3 hour hold improved brisket quality. Meanwhile a late brisket means hungry guests. So every timeline builds in a cushion.

The dry cooler method

  1. Warm the cooler with hot water for 15 minutes, then dry it.
  2. Line it with old towels.
  3. Wrap the meat in foil or butcher paper, set it in, and cover with more towels.
  4. Close the lid and leave it alone.

At least 2 hours wrapped in a dry cooler. Longer holds of 3 hours or more often make it better.

How long can meat hold in a cooler?+

A well packed dry cooler keeps brisket and pork warm for 4 hours or more. Keep the meat above 140°F.

How long should ribs rest?+

About 15 minutes, loosely tented. Ribs dry out if held too long.
